This nutty granola is my current morning obsession. It literally helps get me out of bed knowing a bowl of this awaits with my morning cuppa. If I do say so myself, it has the best texture of any granola I’ve ever made. It’s so perfectly crunchy, I catch the family dipping straight into the jar and eating it like scroggin! It’s not overly sweet, just hitting that sweet spot between sweet and slightly savoury. I hope this recipe brings your mornings a little more joy. Enjoy!
Nutrition Bite: Tahini. Tahini is a paste made from sesame that is full of healthy fats, vitamins, and minerals. Tahini is a great source of phosphorus and manganese, both of which play vital roles in bone health. It’s also high in vitamin B1 and vitamin B6, which are important for energy production.
Ingredients:
3 ¾ cups rolled oats
1 cup chopped almonds
¾ cup chopped walnuts
3/4 cup dried blueberries (cranberries or raisins would work fine also)
½ cup pumpkin seeds
½ cup tahini
½ cup olive oil
½ cup maple syrup
1 tsp vanilla
1 tsp ground ginger
1 tsp cinnamon
¾ tsp sea salt
Directions:
- Preheat the oven to 165°
- Mix all dry ingredients and spices in a large bowl
- Mix tahini, olive oil, maple syrup, and vanilla in a pot on low heat. Stir until the liquid is evenly mixed.
- Pour the wet ingredients into the dry, and stir together. Spread evenly on two baking trays lined with baking paper and bake at 165° for 20 minutes
- Remove from the oven and stir, making sure it is spread out evenly again before putting it back in the oven.
- Place it back in the oven and bake for another 10 minutes. It is done when it is golden brown but not yet crispy (it will crisp up on cooling)
- Let it cool completely out of the oven, and then store it in an airtight container or jar when completely cooled.
- Enjoy with milk, yoghurt and fruit of choice. I love it with oat milk, vanilla coconut yoghurt and banana!
